Thanksgiving is right around the corner. I’m the one who always cooks for the Holiday’s so I’m always looking for good things to make. I came across this Thanksgiving Yam Casserole that I thought I would share with everyone. Happy Cooking…Thanksgiving Yam Casserole
Ingredients
1/3 cp Butter softened3/4 cp Granulated Sugar1 can Evaporated Milk (5oz1 tsp Pure Vanilla Extract1 tbsp Ground Cinnamon1 can Yams drained and mashed, (40oz)TOPPING1/2 cp Corn Flakes chopped1/4 cp Chopped Pecans1/4 cp Sweet Butter melted1/2 tsp Ground Cinnamon
Directions
Cream sweet butter and granulated sugar.Add eggs, evaporated milk, pure vanilla extract and ground cinnamon.Add mashed yams and stir very well until thoroughly mixed.Pour into 7 x 11-inch microwavable baking pan and bake at 350°F for 45 minutes (or you can microwave on High for 10 to 11 minutes). While Yam mixture is cooking, begin prep for Topping.
Topping
Finely chop corn flakes until you have a full 1/2 cup.Mix together chopped corn flakes, chopped pecans, melted sweet butter and ground cinnamon (it will get sticky). Evenly distribute over casserole.Bake for an additional 10 to 15 minutes (or microwave on High for 2 to 4 minutes).
